It’s Memorial Day weekend and for me that means it’s family reunion time tomorrow! My husband’s family gets together every year on Memorial Day weekend for a big reunion filled with food, games, music and fun! This side of his family is Mexican, so food wise there is rice, beans, tortillas, meat, chips, salsa, ect. I’m usually at a loss on what to add to the mix (and usually just end up bringing some store-bought cookies or the like) but this year I found this recipe and had to try it! I taste tested it a few minutes ago and think it’ll be a hit! I started with these mini wagon wheel pasta, aren’t they cute?!
Taco Pasta Salad
1 lb wagon wheel pasta
1 can black beans, drained and rinsed
1 15oz can of sweet yellow corn
2 roma tomatoes, seeded and diced
8oz shredded Mexican-blend cheese
1 1/2 cups salsa (I used a medium chunky variety)
1/2 cup olive oil
3 1/2 tbsp lime juice
1 1/2 tbs taco seasoning
freshly ground pepper & garlic salt to taste
1/2 cup chopped fresh cilantro
1 avocado, diced
1) Cook the pasta according to package directions (I don’t like it al dente, so I usually add a few minutes). Drain and rinse with cold water.
2) In a large bowl, combine the black beans, corn, tomatoes, salsa, and cheese. Add the cooled pasta and mix well.
3) In a measuring cup, whisk together the olive oil, lime juice, and taco seasoning. Pour over the pasta salad, add the cilantro, and mix well. Season to taste with salt & pepper.
4) Just before serving, stir in the diced avocado. (Photo is pre-avocodo. Since I made the salad the night before, I’m not adding the avocado until right before we leave for the reunion).
